THE SWAP ★ ★★★★★

A fiery zero proof ginger beer — The ginger beer IS the drink here, so buy the hottest one you can find. Fever Tree and Q both bring real ginger burn, about $1 to $2 a can, and that burn is what replaces the vodka's bite.

No bottle? No problem. Use ginger ale plus a half teaspoon of finely grated fresh ginger, stirred in and left a minute. Softer, but the ginger still shows up.

Some classics fight you when the alcohol leaves. The mule high fives you. It was always a delivery system for cold ginger fire and lime, and the vodka was mostly there to be cold and quiet. Take it out, put a decent zero proof stand in or even nothing at all, and the drink barely blinks.

Why this version works

A mule has three jobs: burn, snap and freeze. The ginger beer brings the burn — real ginger heat reads to your palate a lot like spirit bite, which is the trick the whole drink is built on. Lime brings the snap. A mug full of ice brings the freeze. The vodka alternative adds a little neutral body so the drink feels grown up in the middle, but the architecture stands on ginger, and ginger does not need alcohol’s permission to be intense.

The method

  1. Fill a copper mug or a tall glass with ice to the very top. This drink lives at near freezing.
  2. Pour in the vodka alternative and the lime juice.
  3. Top with the chilled ginger beer, pouring slowly so the fizz survives the trip.
  4. Stir once, gently, from the bottom. One stir. The bubbles are load bearing.
  5. Set the lime wedge on the rim and serve it before the mug warms in your hand.

Make it yours

Kentucky cousin: swap the vodka alternative for a whiskey alternative and it becomes a Kentucky mule, darker and warmer.

Berry mule: muddle four blackberries in the mug first. The colour turns a deep jewel red and the ginger loves it.

Mexican mule: use an agave spirit alternative, add a pinch of salt, and the lime goes electric.

Mistakes to avoid

Warm ginger beer. Heat kills carbonation and dulls the ginger. The can should be as cold as the ice.

Stirring like a cocktail. Every extra stir is fizz leaving the building. Build it in the mug, lift once, done.

Ginger ale by accident. Read the can. If it says ale, the drink will be sweet where it should be spicy.

Serving and batching

Serve in copper if you have it, glass if you do not, always with a straw. For a party, set out a mule bar: a bowl of ice, lime wedges, chilled cans and the alternatives, and let guests build their own. It is the rare signature drink that runs itself.

Questions, Answered

Does the copper mug actually matter?

For temperature and theatre, yes; for flavour, mostly no. Copper takes on the cold of the drink and keeps it frosty, which is half the mule experience. A chilled glass gives you the same drink with less drama.

Ginger beer or ginger ale?

Ginger beer, always. It is brewed for heat and bite. Ginger ale is a sweet soda with a ginger accent, and the drink comes out soft and sugary instead of fiery.

Mine is not spicy enough. Help?

Muddle two thin slices of fresh ginger in the mug before you build the drink, or choose a hotter ginger beer. The vodka alternative is neutral, so the ginger sets the entire thermostat.

Can I skip the vodka alternative entirely?

You can, and plenty of people do. Add an extra ounce of ginger beer and a splash of soda. You lose a little body and keep all of the fire and lime.

Zero proof means these drinks are made without alcohol. Some zero proof bottles and bitters carry trace amounts (under 0.5% ABV), about what you would find in a ripe banana or a glass of orange juice. If you are pregnant or avoiding alcohol entirely for health reasons, check your bottle's label and go with what you are comfortable with.
